This is one of the easiest, simplest, yet most delicious meals ever! Warm tomatoes with creamy feta cheese go incredibly well together. It’s the perfect healthy comfort food and only takes about 15 minutes to make from scratch!
You can make more and then store it overnight but honestly, since it’s such an easy and fast recipe, I usually make it fresh. Even if I eat it two days in a row, and I do. The Tomato Feta Pan is the healthiest comfort food ever!
Tomato Feta Pan
Ingredients
- 3 garlic cloves
- 1 small leek
- oil or butter
- 2 tomatoes
- 100 g Feta cheese
- 1 tsp oregano
- 1 tsp basil
- salt and pepper
Instructions
- Peel the garlic and chop it into small pieces. Slice the leek thinly.
- Cook both on low heat in the oil or butter for about 2 minutes.
- Meanwhile, cut the tomatoes into chunks.
- Add the tomatoes to the mix. Sprinkle immediately with the feta cheese. Add salt, pepper, oregano and basil.
- Cook while stirring. As soon as the cheese melts and turns gooey, it's ready to serve. Enjoy!

Vegan
