Food is just as much for the soul as for the body. So when you feel like comfort food, you should definitely listen to your appetite! Comfort food can absolutely be healthy if you make it yourself.
And that’s where Cheesy Sweet Potatoes come in. You can store leftovers in an air-tight container in the fridge for a day or two. I would not recommend it though. Best to make a portion you will finish. This dish is so delicious that it’ll be easy!
Cheesy Sweet Potatoes
Ingredients
- 3 tbsp oil
- 1 tbsp paprika powder
- 1 tsp garlic powder
- 1 large sweet potato
- 100 g cheese, like Gouda
- 1 tsp chilli flakes (optional)
- salt and pepper
Instructions
- Mix the oil, paprika powder and garlic powder in a big bowl. Set aside.
- Peel the sweet potato and cut it into thin strips. Put them in the bowl with the oil and mix them around until they are well coated. Then add some salt and mix again.
- Pre-heat the oven to 200 degrees Celsius. Line a tray with a baking sheet. Spread the sweet potato fries evenly over the baking sheet.
- Bake them for 25 minutes. Take out the tray and sprinkle the cheese on top. For the spicy version cover the cheese with chilli flakes. I also like to add freshly ground pepper.
- Return the potatoes to the oven and bake for another 5 minutes or until the cheese is as melted and soft or crispy as you like. Enjoy!
Variations
Chilli Cheese and other Cheeses
For a chilli cheese version use cheddar cheese and top it with more chilli. Only bake it until the cheese has melted and becomes gooey. Mozzarella is another cheese that melts into a soft gooey mass. Keep an eye on this one though because it burns very easily. A few minutes in the oven should be enough!
I used Gouda in the image. Just like Emmental, you get a very crispy result if you leave the two long enough in the oven. Just the way I like it!
