How did I come up with frozen brownies with cashews? Well. I tried the original recipe a few times but no matter how closely I followed the instructions the bars were never solid enough to take them with me. When I kept them in the fridge they were rather soft, too, so I ended up keeping them in the freezer and Frozen Brownies were born!
My favourite version is with cashew nuts but you can add in any other nut or even nut mix you enjoy. See variations below. I’ve been keeping the bars for up to a month in an airtight container in the freezer. Take one out and wait 5min (you can still bite into it) to 15min (really gooey). Enjoy!
Frozen Brownies with Cashews
Ingredients
- 3 tbsp Coconut oil
- 4 tbsp peanut butter (I use chunky peanut butter)
- 3 tbsp unsweetened cocoa powder
- 2 mashed bananas
- 150 g salted and roasted cashews
- cling foil
Instructions
- Cut the cling foil into 10 rectangles and set them aside. If you want thicker brownies, only make 8.
- Melt the coconut oil and the peanut butter in a sauce pan over very low heat.
- Mix in the unsweetened cocoa powder and the mashed bananas. Stir very well and keep mashing the banana until everything is well combined. You should get a smooth mass that no longer sticks to the side of the pan. It takes a few minutes of mashing and stirring but it's well worth it!
- Turn off the heat and mix in the cashews. If you use unsalted cashews make sure to add a pinch of salt.
- Put a little bit of the mixture on each cling foil bit and wrap it up carefully. Press it into a bar shape.
- Put the wrapped up brownies into a freezer-proof container and store them in the freezer. Wait at least 12 hours before you try one. Take it out at least 10 minutes before you are ready for dessert. Enjoy!

Variations
Nuts
I’ve tried the recipe with peanuts and a nut mix before and both worked well. You can use your favourite nut. If it’s a bigger kind, like pecan or walnut you might want to chop them up a bit. I prefer the nuts to be roasted. The taste is better.
