Veggie Mushroom lasagne is one of my favourite recipes. It really is as delicious as it looks! When I made it for the first time, I had way too much Veggie Tomato Sauce, hence the additional recipe. The veggies I used were simply leftovers I really needed to use up. Except for the mushrooms. Those should always be fresh.
I used a small oven-proof dish (7.5 x 5.5 inches) that comes with a lid so I simply store the lasagne in it in the fridge overnight. Enjoy this delicious dish!
Veggie Mushroom Lasagne
Ingredients
- 200 ml Veggie Tomato Sauce, or marinara sauce
- 4 Lasagne sheets (uncooked)
- 200 g mushrooms, like button mushrooms
- 4 tbsp cream cheese
- 70 g mozzarella
- salt and pepper
Instructions
- Cut the mushrooms into thin slices and get all your ingredients ready.
- Pre-heat the oven to 200 degree Celcius.
- Get your baking tray and start layering. Add a layer of the tomato sauce. Cover it with a lasagne sheet. This lasagne has four layers. I broke the fourth lasagne sheet apart to fill in the sides on each layer.
- Spread cream cheese on the top of your lasagne sheet. If the cream cheese is too difficult to spread, just add small dollops of it. It will spread out in the oven.
- Place the mushroom slices in two layers on top. I like to add pepper here too.
- Another layer of lasagne sheet topped with tomato sauce.
- Add another lasagne sheet and spread it with cream cheese. Finally, place two more layers of mushrooms on top and sprinkle them with the mozzarella and pepper.
- Bake in the oven for 40 minutes. Once the lasagne is done, leave it to cool in the baking tray for at least 10 minutes before you serve it so the ingredients and the cheese can settle and you can cut it more easily.
Variations
Vegan
Use vegan cream cheese and vegan mozzarella to top it off. You can also leave the cream cheese out if you want. The mushrooms and the tomato sauce are juicy enough for a great result!
Less carbs
Well, it’s a lasagne so there’s noodles in it. If you wanted to cut back on the carbs, you could just create two layers: tomato sauce, mushrooms on top, lasagne sheet, tomato sauce, mushrooms on top and just top it up with cheese.
