These chocolate puffs are so insanely good. They are a variation of Frozen Brownies and I have to tell you, even I was utterly surprised how different these turned out just just by using wheat puffs instead of nuts.
They are gooey and super sweet. I still keep them in the freezer and take them out about 20 minutes before I am ready to eat them. The perfect sugar-free treat for your carb up week or when you need an extra boost of energy.
These are already vegan and can be stored in an airtight container in your freezer for weeks, or I’m assuming even months, although I don’t see that happening any time soon. Just too good!
Chocolate Puffs
Ingredients
- 4 tbsp peanut butter heaped spoons
- 3 tbsp coconut oil
- 3-4 tbsp unsweetened cocoa powder
- 2 mashed bananas
- 1 pinch salt
- 70 g unsweetened wheat puffs
Instructions
- Mix the peanut butter, coconut oil, cocoa powder and salt together over very low heat. Stir until everything is well combined.
- Add the bananas and keep mashing them with a spatula. Stir and mash for several minutes until the mix is banana-lump-free and everything is well combined. Take your time with this step. It really makes a big difference. You know your mixture is done when it stops sticking to the sides of the pot.
- Fold in the wheat puffs. Pour the mixture into a freezer-save dish and let them rest in the freezer for ten minutes. Set a timer!
- Cut cling foil into 12 large squares. Once your mixture has hardened, cut it into 12 slices and wrap each slice in cling foil. Store them in an air-tight container in the freezer.
- Any time you feel like a really deliciously sweet treat, take one bar out of the freezer and let it thaw for at least 20 minutes before you eat it. Enjoy!
Variations
Grain puffs
I used wheat puffs for this recipe because I don’t like rice puffs. If you do, though, go for it. Any puffed cereal will work. I’m definitely trying puffed barley and millet next. You can also combine different kinds if you prefer (or have leftovers you want to use).
