Carb-up week and you’re feeling peckish? Try Frozen Brownies with Seeds! They are a delicious variation of Frozen Brownies with Cashews. Yes, they are a bit more complicated to make but trust me and roast those seeds first! If you feel like it, you can even roast a larger batch and keep some as a Roasted Seeds Snack.
I’ve been keeping the bars for up to a month in an airtight container in the freezer. Take one out and wait 10min (you can still bite into it) to 20min (really gooey). Enjoy!
Frozen Brownies with Seeds
Ingredients
- 1/2 cup quinoa
- 1 tbsp oil
- 1/2 cup sunflower seeds
- 1/2 cup pumpkin seeds
- 1/4 cup sesame seeds (white or black or a mix)
- 3 tbsp coconut oil
- 4 tbsp peanut butter (I use the chunky kind)
- 3 tbsp unsweetened cocoa powder
- 2 mashed bananas
- pinch salt
Instructions
- Boil 1 1/2 cups of water. Add the quinoa as soon as the water boils. Leave it to cook for 15 minutes.
- While the quinoa cooks, heat up the oil and roast the seeds on low medium heat.
- Cut up the cling foil into 12 rectangles. Stir the seeds every now and then. Drain the quinoa. Set it and the roasted seeds aside.
- In a new pot mix the coconut oil, peanut butter, unsweetened cocoa powder, mashed bananas and pinch of salt over low heat. Stir and keep mashing the bananas until everything is well combined. You know it's done when you have a banana-lump-free mass that no longer sticks to the side of the pot. It takes a few minutes but is well worth the effort.
- Stir in the quinoa and the seed mixture.
- Use a spoon to place a little bit of the mixture on each cling foil rectangle. Wrap them up and press them into bar shapes.
- Put your wrapped up brownies into a freezer-proof container and store them in the freezer. Wait 12 hours before you try one. Take it out at least 10 minutes before you are ready for dessert. Enjoy!

Seeds
Don’t like any of the seeds I picked? No problem. Try your favourite seeds, instead. And if you don’t like quinoa (or can’t be bothered with the cooking), replace them with hemp seeds.
