Frozen chocolate bars with a seed mix. The perfect snack when you need some extra healthy carbs.

Ingredients
1/2cupquinoa
1tbspoil
1/2cupsunflower seeds
1/2cuppumpkin seeds
1/4cupsesame seeds (white or black or a mix)
3tbspcoconut oil
4tbsppeanut butter (I use the chunky kind)
3tbspunsweetened cocoa powder
2mashed bananas
pinchsalt
Instructions
Boil 1 1/2 cups of water. Add the quinoa as soon as the water boils. Leave it to cook for 15 minutes.
While the quinoa cooks, heat up the oil and roast the seeds on low medium heat.
Cut up the cling foil into 12 rectangles. Stir the seeds every now and then. Drain the quinoa. Set it and the roasted seeds aside.
In a new pot mix the coconut oil, peanut butter, unsweetened cocoa powder, mashed bananas and pinch of salt over low heat. Stir and keep mashing the bananas until everything is well combined. You know it's done when you have a banana-lump-free mass that no longer sticks to the side of the pot. It takes a few minutes but is well worth the effort.
Stir in the quinoa and the seed mixture.
Use a spoon to place a little bit of the mixture on each cling foil rectangle. Wrap them up and press them into bar shapes.
Put your wrapped up brownies into a freezer-proof container and store them in the freezer. Wait 12 hours before you try one. Take it out at least 10 minutes before you are ready for dessert. Enjoy!
Notes
Take a frozen brownie out of the freezer and let it thaw for 15 minutes before you eat them (or longer if you like them fudgy).
