I love garlic! And this is my favourite dip! It goes with just as well with hot dishes, like Sweet Potatoes and Mushrooms, as with cold ones, like carrot and celery sticks.
Yes, you can absolutely prepare it in bulk. Just bear in mind that the garlic flavour gets stronger with every day you keep it. So for a milder flavour prep it a few hours before the meal. For a stronger flavour the day before.
Garlic Quark
Ingredients
- 200 g quark
- 3 garlic cloves
- salt and pepper
Instructions
- Peel the garlic cloves and chop them into small pieces.
- Empty the quark into a bowl. Add the garlic and stir. Salt and pepper to taste.

Use the high-fat quark version (40% fat i.T.) if you can find it or mix in cream cheese and/or mascarpone.
Herbs
Not such a big fan of garlic? Or maybe you just want to add other flavours too. That’s fine. You can mix in any herbs you like. A bit of parsley and dill tastes nice. Or for a more mediterranean flavour oregano and basil are a good mix too. Use fresh herbs. I tried dried herbs in the past and I could barely taste them.
Finely chopped red or spring onion is also great but only add that if you are going to eat the dip really quickly. Once you add onion, you can only store it in the fridge for a day. It goes bad really quickly.
