Sometimes we make things too complicated, especially food. Let’s change it up with this super simple bean soup. Beans are nutritious and packed with flavours. All they need is a bit of seasoning and dinner is served!
You can make a large portion, especially if you cook the beans from scratch. Store leftovers in the fridge for up to 5 days, or freeze the soup in portions. Then all you have to do is re-heat it.
Super Simple Bean Soup
Ingredients
- 100 g beans pre-soaked for 72 hours
- 50 g butter
- 1 red onion
- 4 garlic cloves
- salt and pepper I used a pepper mix, freshly ground
Instructions
- Wash the pre-soaked (min 72 hours) beans and cook them for 50 minutes or until they are done.
- Meanwhile dice the onion and the garlic.
- When the beans are done, pour them into a sieve. Melt the butter in the same pot on very low heat.
- Cook the onion and garlic in the butter for about 2 minutes. Add some salt and a lot of pepper.
- Put the beans back into the pot. Use a hand blender to mash up a few of the beans, but not all of them unless you prefer a perfectly smooth soup. (I don't.)
- Add water until the soup is as thin as you would like it to be. Add more salt to taste.
- Leave the soup to simmer on medium-low heat for another 10 minutes. Enjoy!
Variations
Vegan
Replace the butter with three tablespoons of vegetable oil, like sunflower oil, or if you like the flavour, olive oil.
