Super Simple Bean Soup

The most basic, yet delicious, soup recipes for days when you can't be bothered.

Ingredients

  • 100 g beans pre-soaked for 72 hours
  • 50 g butter
  • 1 red onion
  • 4 garlic cloves
  • salt and pepper I used a pepper mix, freshly ground

Instructions

  • Wash the pre-soaked (min 72 hours) beans and cook them for 50 minutes or until they are done.
  • Meanwhile dice the onion and the garlic.
  • When the beans are done, pour them into a sieve. Melt the butter in the same pot on very low heat.
  • Cook the onion and garlic in the butter for about 2 minutes. Add some salt and a lot of pepper.
  • Put the beans back into the pot. Use a hand blender to mash up a few of the beans, but not all of them unless you prefer a perfectly smooth soup. (I don't.)
  • Add water until the soup is as thin as you would like it to be. Add more salt to taste.
  • Leave the soup to simmer on medium-low heat for another 10 minutes. Enjoy!
