Super Simple Bean Soup
The most basic, yet delicious, soup recipes for days when you can't be bothered.

- 100 g beans pre-soaked for 72 hours
- 50 g butter
- 1 red onion
- 4 garlic cloves
- salt and pepper I used a pepper mix, freshly ground
Wash the pre-soaked (min 72 hours) beans and cook them for 50 minutes or until they are done.
Meanwhile dice the onion and the garlic.
When the beans are done, pour them into a sieve. Melt the butter in the same pot on very low heat.
Cook the onion and garlic in the butter for about 2 minutes. Add some salt and a lot of pepper.
Put the beans back into the pot. Use a hand blender to mash up a few of the beans, but not all of them unless you prefer a perfectly smooth soup. (I don't.)
Add water until the soup is as thin as you would like it to be. Add more salt to taste.
Leave the soup to simmer on medium-low heat for another 10 minutes. Enjoy!
