I love this recipe! Whenever I crave comfort food or want to carb up, the combination of crispy sweet potatoes and delicious mushrooms is just perfect. The thinner you slice the potatoes and the mushrooms, the crispier they get. And the faster they cook!
I love to eat this dish with a home-made sauce, like guacamole or garlic quark. For this recipe I used smoked paprika as seasoning. So delicious!
Sweet Potatoes and Mushrooms
Ingredients
- 1 small sweet potato
- 100 g brown button mushrooms
- 5 tbsp oil
- 1 tsp dried garlic
- 1 tsp smoked paprika
- salt and pepper
Instructions
- Mix 2 tbsp oil, dried garlic and the smoked paprika together in a big bowl. Put it aside to soak.
- Pre-heat the air fryer (optional).
- Peel the sweet potato and cut it into thin slices. The thinner the slices the crispier the result. Add them to the oil, add salt, and toss them around until they are coated on all sides.
- Put the potatoes into the air fryer and set it to 10 min at 200 degrees Celcius.
- Mix the rest of the oil with the spices left in the bowl. Top up with spices if you think it's not enough and add a lot of pepper.
- Cut the mushrooms into thin slices and toss them into the bowl. Add salt and mix until they are well covered.
- When the 10 min are over, stir the potatoes. Add the mushrooms on top and put everything back into the air fryer for another 5-10 minutes. Check after 7min to avoid burned potatoes. Enjoy!
Variations
Keto
Use another vegetable instead of the sweet potato. Turnips and radishes have a very similar texture. Most of the flavour comes from the smoked paprika anyway so you might not even notice a difference!
Change the Flavour
I have made this recipe just with oil, salt and pepper. You can make your own marinade, depending on your taste! Why not try a curry version? If you want to use fresh herbs, turn the heat down to 180 degrees Celcius and add 5-10min to the cooking time. Otherwise your herbs will burn. I’m a fan of the classic oregano-basil combination. But you can try anything you like. Have fun!
