The Tomato Mozzarella Bake is another great version combining these warm tomatoes with cheese. It’s just as delicious as the Tomato Feta Pan. Food for the body and the soul.
It’s also a great hit with family and friends. I make it as a side dish then. You can store left-overs in the fridge over night. Make sure to re-heat the tomato mozzarella bake before you eat it. Warm tomatoes are just the best!
Tomato Mozzarella Bake
Ingredients
- 300 g cherry tomatoes, or as many tomatoes and whichever kind you have
- 1 tsp dried oregano
- 1 tsp dried basil
- 50 g grated mozzarella
- salt and pepper
Instructions
- Wash the cherry tomatoes and cut them in half or smaller pieces if you use a different kind of tomato. Place them a small baking dish.
- Add salt, oregano and basil. Mix everything well, then spread the tomatoes evenly in the baking dish.
- Top them with the mozzarella and add freshly ground pepper.
- Bake them at 200 degrees Celcius for 10-15 minutes until the cheese has melted and is the colour you like it to be. If your oven has a grill function, use that and keep checking after 10 minutes. Serve as a side dish for your main meal or use it as a topping for a green salad. Enjoy!
Variations
Cheese
You can absolutely use a different cheese. Gouda, cheddar and emmental will form a less gooye crust. If you leave them for too long, the cheese will even turn crispy. You can also use feta cheese. Check frequently so it won’t burn.
