Tomato Mozzarella Bake
Great simple side dish when you have too many rip tomatoes and some mozzarella.

- 300 g cherry tomatoes, or as many tomatoes and whichever kind you have
- 1 tsp dried oregano
- 1 tsp dried basil
- 50 g grated mozzarella
- salt and pepper
Wash the cherry tomatoes and cut them in half or smaller pieces if you use a different kind of tomato. Place them a small baking dish.
Add salt, oregano and basil. Mix everything well, then spread the tomatoes evenly in the baking dish.
Top them with the mozzarella and add freshly ground pepper.
Bake them at 200 degrees Celcius for 10-15 minutes until the cheese has melted and is the colour you like it to be. If your oven has a grill function, use that and keep checking after 10 minutes. Serve as a side dish for your main meal or use it as a topping for a green salad. Enjoy!
