Tomato Mozzarella Bake

Great simple side dish when you have too many rip tomatoes and some mozzarella.

Ingredients

  • 300 g cherry tomatoes, or as many tomatoes and whichever kind you have
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 50 g grated mozzarella
  • salt and pepper

Instructions

  • Wash the cherry tomatoes and cut them in half or smaller pieces if you use a different kind of tomato. Place them a small baking dish.
  • Add salt, oregano and basil. Mix everything well, then spread the tomatoes evenly in the baking dish.
  • Top them with the mozzarella and add freshly ground pepper.
  • Bake them at 200 degrees Celcius for 10-15 minutes until the cheese has melted and is the colour you like it to be. If your oven has a grill function, use that and keep checking after 10 minutes. Serve as a side dish for your main meal or use it as a topping for a green salad. Enjoy!
