Chocolate Semolina Pudding

The perfect comfort food: healthy carbs, protein and some fruit. And chocolate to top it all off.

Ingredients

  • 1 ripe banana
  • 3-4 tbsp cocoa powder
  • 4 tbsp wholegrain semolina
  • 400 ml milk
  • 1 pinch salt

Instructions

  • Mash up the banana. Add the cocoa powder and keep mashing and mixing until you have a smooth chocolaty paste.
  • Stir in the semolina to avoid lumps.
  • Transfer the mix to a small pot and turn the heat to low. Add the milk slowly. Start with really small amounts and stir them into the mix carefully. When the pudding turns more liquid you can pour in more milk at a time.
  • Add the pinch of salt. Take the pudding off the stove.
  • Leave it to rest for ten minutes. Keep stirring to avoid a dried layer on top. Serve while warm. Stir in some honey or fruit for extra sweetness.
