Beat one of the eggs with a fork.
Add 1/2 tsp garlic, paprika and chilli with a pinch of salt to the egg. Mix it together and leave it for a few minutes.
Meanwhile heat up a non-stick pan. If you add oil the eggs will be crispier.
Pour the egg into the pan, cover it with freshly ground pepper and cook your omelette on both sides until it is as well done as you like it.
While the first omelette cooks, beat the second egg and mix the rest of the spices into it. Remove the first omelette from the pan and cook the second omelette.
While the first side fries, cut the goats cheese into slices. As soon as you flip the omelette once, spread the goats cheese over the already done side and cover it with the first already done omelette.
Turn off the heat. When the second omelette is done, flip both carefully once and leave in the pan for another minute, until the goats cheese has melted. Enjoy!
