The perfect comfort food for cold (or warm) days: Semolina pudding. These two variations are both sugar-free and made with wholegrain semolina. They are also super versatile because you can eat either of them with different fruits. A friend of mine used the chocolate version as a dip for orange slices.
Store leftovers in an airtight container over night. You can eat the puddings cold but I would recommend that you reheat them. They just taste better. If you make the fruit version, put half of the pudding aside before you add the fruit and then add fresh fruit on the second day when you reheat it.
Chocolate Semolina Pudding
Ingredients
- 1 ripe banana
- 3-4 tbsp cocoa powder
- 4 tbsp wholegrain semolina
- 400 ml milk
- 1 pinch salt
Instructions
- Mash up the banana. Add the cocoa powder and keep mashing and mixing until you have a smooth chocolaty paste.
- Stir in the semolina to avoid lumps.
- Transfer the mix to a small pot and turn the heat to low. Add the milk slowly. Start with really small amounts and stir them into the mix carefully. When the pudding turns more liquid you can pour in more milk at a time.
- Add the pinch of salt. Take the pudding off the stove.
- Leave it to rest for ten minutes. Keep stirring to avoid a dried layer on top. Serve while warm. Stir in some honey or fruit for extra sweetness.
Semolina Pudding with Peach
Ingredients
- 400 ml milk
- 4 tbsp wholegrain semolina
- 1 peach
- 1 pinch salt
Instructions
- In a small pot mix the milk with the semolina powder. Heat it up and stir constantly until the milk becomes frothy.
- Take the pot from the heat. Cut the peach into pieces and add it to the milk.
- Add the salt and leave it to rest for 10 minutes. Stir every now and then to avoid that the top layer dries into a crust. And then enjoy!
Variations
Vegan
Replace the milk with a plant-based alternative and simply leave out the butter. If you use a sugar-free version, you might want to add either an extra mashed up banana or some honey to the mix.
Fruits
The pudding tastes great with a peach but you can add any fruit you like. The same goes for the chocolate version. Try pears, apples, grapes, oranges and any other fruit you enjoy eating.
